TOMATO BISQUE RECIPE

🍅

Ingredients :

1/3 Cup Veg Oil

Fresh Basil 🌿

Thyme

2 Can San Marzano Whole/ peeled

Salt/ Pepper

2 Cup Heavy Cream

1 yellow onion

7 Cloves Garlic

1 Tbps Chili Flakes

1. Add oil Med Heat Pot , add sliced Garlic and Onions , Cook for 10 Min.

2. Add Tomatoes , Let Cook for 10 Min while breaking them up with your Spoon.

Add Bunch of Basil (with Stems) , Thyme + Stock, Salt/Pepper/Chili Flakes

3. Let simmer on low for 1 hour for most depth flavor . Remove Basil Stems Emulsify/Blend. Let Simmer for additional 15 Min , Stir, Stir Stir.

4. Add Cream + Let Simmer for 3 Min then take off heat.

*Garnish With Sea Salt , Fresh Basil Leaves + EVOO

Best w/ Smoked Cheddar+ Gruyere Grilled Cheese 🧀

Rotisserie Chicken🍋

Ingredients:

1 Whole Chicken 

For Brine :

1 Lemon Sliced 

2 Bay Leaves 

1/2 Cup Kosher Salt 

1/3 Cup Sugar 

1 Gallon Water 

1 Tablespoon Whole Black Peppercorns 

2 Sprigs Thyme 

2 Sprigs Rosemary 

2 Garlic Cloves

Brining is the simple process of submerging a cut of meat in Salty Water. The meat absorbs extra liquid and salt, resulting in a juicier and more flavorful final dish!

Make Your Brine 

1. Small pot - med heat -Add just 2 Cups of water, Salt, Sugar. Dissolve .

2. While that cools down, add All of your other ingredients to water , then add salty water . 

3. Add Chicken , Make sure it’s completely submerged. Cover and store overnight. (No longer than 24 Hours) 

Seasoning:

1 Stick of butter (Room Temp)

2Tbsp Oregano

2Tbsp Onion Powder

2Tbsp Salt 

2 Tbsp Black Pepper

2Tbsp Garlic Powder

1 Tbsp Smoked Paprika

Pre-heat Oven to 400 Degrees F.

1. Add all of your spices to your soft butter,  stir to combined. 

2. Loosen the skin of the chicken breast. Rub the butter mixture all over the chicken, both on the outside of the chicken and underneath the skin.

3. Place the Chicken in Roasting Pan, Cook for 1 Hour 15 Min (Baste w/ pan juices every 25 Min) Let rest for 10 Min 

4. Bon Appétit 🍴 

****We Added lightly seasoned potatoes 30 Min before Ready time and our favorite 🌽 15 Min Before in the same pan for flavor ! 


Chicken+ Kimchi Stir Fry Noodles

Ingredients: 2-3 Servings  

1/2 Cup Veg Oil  8Oz Kimchi (Chopped)

14 Oz of your Favorite Noodles 

1 Head of Broccoli 

4 Oz of Shiitake Mushrooms

1/2 Cup of Minced Ginger 

1/2 Cup Minced Garlic 

1 Oz Sliced Green Scallions (Save half for Garnish)

1 Chicken Breast Cubed (Season Lightly with Soy)

3-4 Asparagus Med-Diced 

Sauce: Whisk + Set Aside

1/2 Cup Low Sodium Soy  

1/3 Cup Honey 

1/3 Cup  Water 

1 Tsp Sesame Oil

1 Tbsp Korean Chili Paste 

Garnish (These are optional, but they certainly enhance the flavor!)

1 egg,  soft boiled or pan-fried

1 Tbsp Roasted Sesame Seeds

Scallions thinly sliced

Sriracha for added Spice 

1.Have your Wok or Pan Med High heat , add Oil and Sear Chicken (About 12 min) Then add Garlic, Ginger and Scallions (Cook for 30 seconds, do not let brown) Add your Broccoli , Asparagus and Kimchi and cook for 4 Min before adding Sauce. Toss for 2 Min 

2,Add your pre-cooked noodles, Cook for 3 min and Wahhlahhhh!  Drizzle a dash of Veg Oil and Salt to your mushrooms and air-fry them for 5 Min at 375 for a crispy delicious Garnish or Throw them in your Stir-Fry!

Spicy Corn Chowder


🌽Spicy Corn Chowder 🌽 

Ingredients: 3-4 Servings

2 Tablespoons Unsalted Butter 

1 large Carrot 🥕 

1 Celery Stick 

4 Ears of Corn (You can also use canned corn 🌽)

1 Yellow Onion

3 Garlic Cloves 

1 Bay Leaf

1/2 tsp Thyme 

1/2 tsp Smoked Paprika

1 Tablespoon Sriracha 🌶 (up to you) 

1 cup of Heavy Cream (if you want a thicker/fattier chowder , add more cream) 

2 Potato’s 🥔 (Fingerlings /Red/Idaho is fine)

4 Cups Veg Broth 

Fresh Herb (Parsley, Cilantro or Chives) 

Super simple Recipe! You can Add chicken, Bacon , whatever you like! 

1.Small Dice all of your veggies + Mince your Garlic. 

2. Slice corn kernels off the cob and set aside. Take each ear of corn and hold it over a bowl.  Use either the back of your knife or a spoon and scrape any remaining pulp and juice from the cobs. 

3. Add butter to your med heat pot, add onions 🧅 Cook for 3 Min then add garlic, wait 1 min, add remainder of veggies except potatoes. Salt Pepper to Taste . Sear Veggies for 5 Min. Make sure you are are stirring !

4. Add Potato , broth , and Spices

5. Low heat -Let Simmer for 20 MIn 

6. Take 2 cups of soup, Blend + Pour back in for thicker consistency. 

7. Cook for additional 10 Min

8. Add Cream last ! Salt + Pepper To taste + Garnish with Fresh Herbs. Cilantro, Parsley or Chives 🍃 

Chowder usually has a very thick consistency. This Recipe is less thick (but also has less calories )because untraditionally no Flour was used. Healthier + Delicious !
